Pressing wine is a common means of extracting a more condensed flavor for fermentation. This may be one of the first instances of pressed agave. Since water and fiber are not used in fermentation, the amount of agave used to produce this batch is significantly higher than most mezcal. But the result is a huge and powerful symphony of flavors. Rich and unctuous mouthfeel, with a powerful, perfumed nose of muscat grapes, seashells, pickled mangos and oregano.
